The 30-second answer

Sprouts are a germinated seed. Microgreens are a young plant. You eat a sprout whole - seed, root, shoot, all of it, usually grown in water in the dark for 3-5 days. You eat a microgreen cut above the medium - stem and leaves only, after 7-15 days under light.

The single difference underneath all the others is light. Sprouts never get it. Microgreens do, and that is when the plant starts building the things people buy microgreens for: chlorophyll, carotenoids, vitamin C, vitamin E.

For most people buying rather than growing, microgreens are the better choice: more of what you want per gram, longer in the fridge, and none of the raw-sprout safety warnings. Sprouts win on speed, on seed economics, and on growing in a dark cupboard with no equipment.

They are not two plants, but two phases in the process.

Take a daikon radish seed. Soak it 8-12 hours. Put it in the dark at 18-24°C and 40-60% humidity, keep it moist, and by day three you have a white shoot with a hair-fine root and a seed coat still attached.

Stop there and you have a sprout.

Keep going. Move the tray under light at 200+ µmol/m²/s, twelve to sixteen hours a day. The shoot greens up within hours. Cotyledons open. The stem thickens and colors - daikon runs pink, beet runs deep red. Around day 7 to 10 the first true leaves appear. Cut it above the medium.

Now you have a microgreen.

Same seed. Same first three days. Everything people argue about downstream comes from what happens after day three - and specifically from whether the plant ever photosynthesizes.

The six differences that actually matter

1. Light is the whole nutritional argument

A seed contains a fixed budget. Germination unlocks it - that part is real, and it is why sprouts are genuinely more nutritious than the dry seed they came from. But a sprout in the dark is still spending down a fixed budget.

A microgreen under light starts earning. Photosynthesis begins, and with it the plant builds compounds that were never in the seed.

A 2022 review in Plants laid the progression out directly: raw seeds → sprouted seeds → microgreens, with minerals, vitamins and bioactive compounds increasing at each step. The paper names photosynthetic activity as the reason microgreens accumulate vitamin C, vitamin K and tocopherols beyond what sprouts reach. Red cabbage microgreens in that review carried roughly six times the ascorbic acid of mature red cabbage.

The often-quoted figure - that microgreens can hold up to forty times the nutrients of the mature plant - comes from a 2012 study in the Journal of Agricultural and Food Chemistry that measured vitamins and carotenoids across 25 commercially grown microgreen varieties. The honest reading: the multiple depends entirely on which nutrient and which crop. Red cabbage led on vitamin C, green daikon radish on vitamin E. Some numbers were enormous. Others were modest.

2. What you eat, and what that costs you

You eat a sprout entire: seed coat, root, shoot. That is efficient - almost nothing is discarded.

A microgreen is cut above the medium. The root and the spent seed stay behind. You eat the stem, the cotyledons and the first true leaves, which is where the color, the flavor and the light-built compounds are concentrated.

This is also where a cost illusion lives. A live tray of microgreens sold in soil looks generous and prices well, but you pay for root mass and substrate you will throw away. Cut and packed, roughly double the net usable grams end up on the plate for the same money. We built the entire fresh line around that fact - everything leaves our farm harvested, sorted and washed.

3. Safety: the difference is real 

Sprouts have a documented outbreak history. Between 1996 and 2009 US authorities recorded more than thirty foodborne illness outbreaks tied to sprouts, involving Salmonella, Listeria and E. coli O157:H7. A single 1996 outbreak in Japan sickened roughly 10,000 people. In 2014 alone there were three separate multi-state outbreaks in the US.

The FDA states it plainly: sprouts are grown under warm, humid conditions, and those are the same conditions bacteria prefer. Bacteria can enter a seed through microscopic cracks and then multiply inside the tissue during germination, where rinsing cannot reach them. That is why the FDA advises children, older adults, pregnant women and people with weakened immune systems to avoid raw or lightly cooked sprouts of any kind.

Microgreens are not magically sterile - no fresh produce is. But two things differ. The plant is cut above the growing medium rather than eaten root, seed and all. And the growing environment is drier and ventilated: we hold 40-60% humidity with constant airflow, because mold is our enemy too.

Sprouts are not a bad food. They are a food with a specific risk profile, a named cause, and a named mitigation - cooking them through. If you are in one of the groups the FDA lists, that mitigation is not optional.

4. Shelf life makes the difference

Sprouts last a few days and are wet by nature of the job, which limits their longevity.

Harvested microgreens, cut and packed properly, hold 8 to 14 days refrigerated. Our fresh mixes run 8-10 days at 2-5°C; the single-variety SELECT boxes run 11-14. Live trays with soil sold in shops typically give you three to five days before the tray turns against you.

That difference is in harvest timing, immediate cooling, and packaging that manages moisture instead of trapping it.

5. Taste: one is a texture, the other is an ingredient

Sprouts taste mild. Crunchy, watery, faintly green. They are a texture you add.

Microgreens taste like the plant they were going to become, concentrated and slightly wild. Sunflower is nutty and thick enough to carry a sandwich on its own. Daikon radish is genuinely hot. Pea shoots are sweet. Beet is earthy. Coriander tastes more like coriander than regular mature coriander does.

6. Where sprouts genuinely win

We sell microgreens exclusively, but here is the honest list anyway.

  • Seed economics. A gram of seed produces far more food as sprouts than as microgreens. 
  • Speed. Three days versus ten.
  • Equipment. A jar, a lid, water. No light, no medium, no tray, no rack. If you have a dark cupboard you have a sprouting setup.
  • Cooking. Mung bean sprouts belong in a stir-fry, and cooking them removes the safety question entirely. Microgreens mostly do not survive heat.
  • Legumes. Sprouting genuinely improves the digestibility of chickpeas, lentils and mung beans. Microgreens, besides pea shoots, are not the tool for that job.

If your constraint is money, speed, or a windowless kitchen, grow sprouts. Cook them and enjoy them.

What we actually do with both

Every MOĆNO tray passes through the sprout stage. Days two to four: dark, humid, weighted, no light. That is the sprouting phase, run at scale - roughly 400 trays, including 20+ varieties in rotation, every week.

We just don't stop there. We wait for light to do its work, cut above the medium, cool it fast, and pack it.

Two things we learned in that window that no amount of reading gives you:

The white fuzz almost certainly is not mold. Around day three you will see a fine white halo around the base of the stems. Nine times out of ten those are root hairs, and they will disappear when you mist them. Mold is grey-to-blue, spreads in patches rather than haloes, and smells wrong. If you are unsure, look at humidity first - above 70% with poor airflow is where actual mold starts.

When pale and stretched, it needs light, not water. Leggy microgreens are a lighting problem: not enough intensity, or the transition out of blackout came too late. Move the lights closer and hold 200+ µmol/m²/s for 14-16 hours. More water makes it worse.

Both of those come straight out of our internal growing protocols - the same ones we hand to franchise farms.

The third option nobody in this comparison mentions

Every article on this topic ends the same way: "microgreens are better, buy microgreens, they last about a week."

Which quietly concedes the real objection. Fresh is fresh. It runs out. Most people who bought microgreens once and let half the box wilt did not stop because they disliked them - they stopped because a fresh product asks you to plan.

So we did something else with them.

MOĆNO Pesto is 51-59% microgreens by weight. Not garnished with them, but actually made of them. Protein Peas is 51% pea microgreens; Sunny Delight is 54% sunflower; Radish Rush is 59% daikon radish. The rest is cold-pressed oils, lemon juice, seeds and spices - no additives, no preservatives.

The processing is where the reason-why sits. A long cook would take out most of what the light spent ten days building. Ours is a short, mild pasteurization - 85-89°C for 25 minutes, done by an HACCP-certified partner. Short enough to keep the vitamins in the jar and sufficient to make it stable. It can last for six months unopened, at room temperature - and five to seven days in the fridge once you open it.

  • Pea microgreen pesto sauce (Protein Peas) - iron 9.9 mg (71% NRV), vitamin E 108% NRV, vitamin K 39%, folic acid 25%. Our bestselling jar, and the one to start with.
  • Radish microgreen pesto sauce (Radish Rush) - vitamin K 80% NRV, vitamin C 30%, vitamin E 37%, calcium 137 mg.
  • Sunflower microgreen pesto sauce (Sunny Delight) - vitamin E 120% NRV, zinc 2.8 mg (28% NRV), vitamin B complex (B1, B6, B9) 35% NRV, selenium 18% - the mildest of the three.

Allergens: all three contain honey. Sunny Delight and Radish Rush contain sesame. Protein Peas contains soy. A malt-sweetened recipe is in development; when it launches we will let you know.

This is, as far as we know, the first microgreens pesto in the world, and the first domestic pesto in Serbia. There is no equivalent product for sprouts, and there is not going to be - a wet germinated seed has nowhere to go.

If you want the flavor without the jar, the dried spices are dehydrated microgreens and nothing else: original, with salt, with turmeric, with chili. A pinch finishes a soup.

Frequently asked questions

Which is healthier, sprouts or microgreens?

Microgreens, on nutrient density per gram, because light lets the plant build compounds a dark-grown sprout never makes. Sprouts are still a real improvement on the dry seed, and they beat microgreens on seed economics.

Are raw sprouts safe to eat?

For most healthy adults, generally yes - but the outbreak record is real. The FDA advises children, older adults, pregnant women and people with weakened immune systems to avoid raw or lightly cooked sprouts of any kind. Cooking sprouts through removes the concern.

Can I use the same seeds for both?

Often, yes - untreated broccoli, radish, alfalfa and mung bean seed will do either job. Sunflower and pea are grown as microgreens, not as jar sprouts. Always buy seed sold for food use.

Why do microgreens have more nutrients than sprouts?

Light. A sprout spends the seed's fixed budget in the dark. A microgreen photosynthesizes and starts producing chlorophyll, carotenoids, vitamin C and tocopherols the seed never contained.

Which lasts longer in the fridge?

Microgreens, clearly. Harvested and packed, 8-14 days at 2-5°C. Sprouts give you a few days.

Do microgreens grow back after cutting?

No. Cutting is above the growing point, so a tray is a single harvest. Pea shoots occasionally push a weak second cut, which is rarely worth the tray time.

Is that white fuzz on my tray mold or root hairs?

Usually root hairs - fine, even, halo-shaped around each stem, and they vanish when misted. Mold is patchy, greyish and smells sour. Check humidity: over 70% with poor airflow is the actual risk zone.

Can I eat the roots?

On sprouts, yes - that is the point. On microgreens, no. Cut above the medium and leave the root behind.

Are microgreens worth the price?

Compare usable grams rather than package size. Cut and packed product gives you roughly double the edible weight of a live tray in soil, and it will not die in your kitchen in three days.

The fastest way to settle this argument is to run both yourself. A jar of sprouts costs almost nothing. A first tray of microgreens costs a little more and fails more often - and it usually fails for one of about six reasons, all of which are fixable.
